Characteristics: This varietal is a hybrid of Mundo Novo and Caturra and is highly resistant to natural elements that coffee trees face at higher altitudes. It originated in Brazil but is now widely planted throughout Central America. Both the red and yellow strains demonstrate high acidity.

Gesha

Characteristics: The Gesha plant itself has a tall stature, and is characterized by its oval structure of the bean, strong perfumed floral scent of the blossoms and elongated leaves. The plant is able to stand bitter cold weather conditions.

Villa Sarchí (yellow)

Characteristics: The coffee plant is of compact structure and it has green tips. Being a natural mutation of Bourbon, it is a well-adapated plant to high altitude conditions and tolerant of strong winds. Villa Sarchi is perhaps most well known as one of the namesakes of the “Sarchimor” group of coffees.
Notes: Chocolate, green apple, balanced, almonds.

Characteristics: The coffee plant is very tall, it has large leaves, large internodes and bronze color leaf tips. It has a very good cup quality, but it is highly susceptible to rust and has a low yielding.

Pacamara

Characteristics: Pacamara is the result of crossing of Maragogype (giant grain found in Brazil) and Pacas (a minor mutation of the Bourbon found in El Salvador). It is a very prestigious variety of coffee, not only for its size but also for its quality in cup. The coffee plant is tall, with a green or bronze color tip leaf and a very large bean.
Notes: Fruit, lime, sweet, juicy.

Kimono

Characteristics: It is a natural mutation that took place in the farm, between the varieties of Maragogype and Catuaí. The coffee tree offers large coffee beans, is of leafy complexion, and has long branches that drag to the ground, so Pedro Fernández named it “Kimono”, since it gives the impression of being a female silhouette who wears a kimono.
Notes: sugar, berries, caramel, chocolate, dried fruits, granadilla, lime, honey, vanilla.
Altitude: 1,500 – 1,600 meters / 4,950 – 5,250 feet.
Great influence of the microclimate:: Cold and humid air descending from the Sierra de Las Minas mountain range and warm ascending winds from the Motagua river valley.
